Christmas Cookies.

Happy New Year! Corey and I rang in the new year last night by going to see Tron and having Thai fondue at home afterwards. After counting down to midnight, Good Will Hunting was playing on CBC and since I had never seen it before, we ended up staying awake until 2:30am to watch the movie.

Today’s topic: cookies.

2010 Cookies

I’m not normally a baker; in fact, baking intimidates me and I never feel confident about it. Inspired by one of my colleagues though, I thought I’d try my hand at baking some Christmas cookies this year. I had dreams of baking dozens of different kinds of cookies… and ended up with four types, not including the sugar cookies I made for our children’s Christmas party at work.

Double Chocolate-Peppermint Crunch Cookies – My favourite recipe this year. Easy to make, delicious to eat, and the peppermint extract in the cookie is a lovely surprise.

Trios – Even though I didn’t make very many types of cookies, I think this would be a good recipe for balancing out all those rich, chocolate treats. I didn’t make them into “trios” though; I like them better as singles.

Toffee Squares – These were incredibly easy and delicious. You’re supposed to sprinkle chocolate on top and when it melts in the oven, you can spread the chocolate smoothly. I had difficulties spreading the chocolate smoothly. It spread, but it was a bit messy, some chips fully melted and some not.

Chocolate Hazelnut Crinkle Cookies – I left out the hazelnuts and I’m not sure how the folks at Gourmet made these cookies so beautiful with the dark chocolate contrasting the white confectioner’s sugar. Mine taste great, but they definitely don’t look like the ones in the photo.
